white balsamic magic
Here's my newest recipe creation, and yes, you must use white balsamic vinegar:
1/4 c . white balsamic vinegar
1/2 c. vegetable oil (or a bit less, if you like your vinaigrettes tart)
1/4 c. olive oil
1 shallot, minced
1/2 Tbsp fresh thyme or tarragon
1 1/2 Tbsp plain yogurt
salt and freshly ground pepper to taste
Whisk by hand or in blender until emulsified.
Excellent with a salad of butter lettuce, grapes, red onion, and carmelized walnuts.
Makes a whole lot.

Can you tell me why I have to use a white balsamic vinegar, as opposed to substituting a white wine vinegar?
The white balsamic is very hard to find in my area.
